Yes, you read correct, its a granola that tastes like the most delicious carrot cake.
Eat as is or with yoghurt, milk or my favorite cottage cheese and some fresh berries.
Can be stored in a jar with lid for about 3-4 weeks.
Makes about 8 cups

4 cups rolled oats
1 12 cup roughly grated carrots
1 cup chopped pecans
1/2 cup chopped walnuts
1/2 cup chopped almonds
1 cup flaked coconut
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1 teaspoon ground nutmeg
1/4 teaspoon ground cardamom
Pinch of salt
1 cup maple syrup
1/2 cup olive oil
2 teaspoons vanilla extract
1 cup golden raisins
1.Preheat oven to 330F.
2.In a large bowl mix oats, carrots, nuts, coconut and spices.
3.In a small bowl stir together maple syrup, oil and vanilla.
4.Pour the mixture over the granola and mix well.
5.Spread the granola onto two baking sheets and bake for 20 minutes.
6.jtir the mixture and bake for another 10-15 minutes, it should be golden and crisp.
7.Cool on the trays, mix in the raisins and place in jars.
