Cardamom Waffle Cake with Fall Berries and Maple Syrup

These are the waffles I grew up with in Norway, they are thinner and round.

You need to get a special iron to make them, easy to find.

We used to make this “cake” on spacial occasions, it was one of my childhood favorites.

Serves 5

3 eggs

1/2 cup sugar

1 stick butter, melted

1/2 cup milk

1/2 cup sour cream

1 1/2 cup all-purpose-flour

1/2 teaspoon cardemom

whipped cream

berries and figs

fresh mint

maple syrup

1.Mix eggs and sugar and beat until creamy.

2.Add butter, milk and sour cream and mix well.

3.Mix inn flour and cardamom and beat until you have a smooth batter.

4.Heat the iron and make waffles, let they cool.

5.On a platter, layer the waffles with cream in-between each layer.

6.Top with berries, figs, mint and maple syrup.

7.Cut up and serve with extra cream, berries and maple syrup.
