Wilted Greens with Smoked Salmon and Eggs

This is a really easy brunch dish. You can use any greens, like spinach, arugula, kale, and so on. I always add lots of pepper to the salmon. Try it; you’ll be hooked.


SERVES 4

You will need:
6 Brussels sprouts
2 tablespoons butter
2 cups fresh spinach or arugula
salt and pepper
12 slices of smoked salmon
4 fried eggs

  1. Start by cutting the ends off the Brussels sprouts and peeling off all the leaves.
  2. Heat the butter in a pan, and sauté the all greens until they start to go soft. Season with salt and pepper.
  3. Divide the cooked greens onto 4 plates, and top with smoked salmon and eggs.
  4. Don’t forget to crack some pepper on the salmon—it’s divine.
