
22 Sep Apple Muffins
This is such an easy basic muffin recipe. I love to use fresh apples in it when available. You can swap in your favorite seasonal fruit if you like and experiment with spicing as well!

Makes 12 muffins
You will need:
1 cup all purpose flour
1 cup whole wheat pastry flour
1 teaspoon salt
2 teaspoon baking powder
1 cup milk
1 stick unsalted butter, melted
2 large eggs, lightly beaten
1/2 cup granulated sugar
1/4 cup brown sugar
1 tablespoon cinnamon
1/4 teaspoon cloves
1 apple, such as Granny Smith, cored and diced
- Preheat oven to 350 ̊F.
- Mix dry ingredients and sift.
- Mix wet ingredients; combine.
- Add apple pieces.
- Spoon into muffin cups and bake for about 25 minutes, or until a cake tester comes out clean.
- Cool completely and enjoy.
