
27 Oct Apple and Vanilla Chutney
This is the perfect chutney to serve with cheese.
Especially good with any kind of blue cheese.
Makes about 2 cups
3 tart apples
seeds from 1 vanilla bean
1/3 cup dry white vine
1/4 cup water
3 tablespoons sugar
pinch of salt
pinch of grated nutmeg
1.Peel and core the apples and cut them into small dices. You can keep the peel on some of the apples, it will make a more textured chutney.
2.Place them in a pot with vanilla, vine, water and sugar.
3.Let the mixture simmer for about 30-35 minutes, or until you like the consistency.
4.Season with a pinch go salt and some freshly grated nutmeg.
5.Cool and store in a jar with a tight lid in the fridge.
