17 Aug West Coast Oyster in its Element
Such a beautiful way of serving oysters.
You will need:
6 medium oysters, shucked
large handful of soft lettuce (or sea lettuce if you can find it)
a few endive leaves
green beans, blanched, salted
flat leaf parsley
squeeze of fresh lemon
- Top the freshly shucked oysters with pieces of lettuce, endive, beans, and parsley.
- Add a squeeze of lemon.
- Serve immediately, balanced on chilled beach stones.
