Scallops with Dill Oil

My partner Anthony’s favorite food is scallops.
Whenever I feel like cooking and ask him what he wants the answer is always the same.

 

“Honey, I want scallops”.

I do enjoy them, but there is only so many scallops you can eat!
I always prepare them in the simplest way, grilled outside or in a grill pan, only 30 sec on each side.

If you serve with this dill oil I guarantee a great meal.

“Honey, your scallops are ready!”

 

Serves 4

1/2 shallot, finely chopped
2 tablespoons finely chopped dill
juice from 1/2 lemon
grated zest from 1/2 lemon
1/2 cup olive oil
salt and pepper
8-12 scallops
butter, for frying

  1. In a bowl stir together shallot, dill, lemon juice and zest and olive oil.
  2. Salt and pepper to taste.
  3. Fry or grill the scallops, they take about 30 seconds on each side.
  4. Serve warm with the dill oil.


TIP:
Great appetizer.
