
24 Sep Scallops with Dill Oil
My partner Anthony’s favorite food is scallops.
Whenever I feel like cooking and ask him what he wants the answer is always the same.
“Honey, I want scallops”.
I do enjoy them, but there is only so many scallops you can eat!
I always prepare them in the simplest way, grilled outside or in a grill pan, only 30 sec on each side.
If you serve with this dill oil I guarantee a great meal.
“Honey, your scallops are ready!”
Serves 4
1/2 shallot, finely chopped
2 tablespoons finely chopped dill
juice from 1/2 lemon
grated zest from 1/2 lemon
1/2 cup olive oil
salt and pepper
8-12 scallops
butter, for frying
- In a bowl stir together shallot, dill, lemon juice and zest and olive oil.
- Salt and pepper to taste.
- Fry or grill the scallops, they take about 30 seconds on each side.
- Serve warm with the dill oil.
TIP:
Great appetizer.
