Roasted Beet Dip with Almond Butter & Lemon

A rich and earthy beet dip that will be the hit of your next party!


Serves 6

6 large roasted and peeled beets, cold (you can totally use store bought)
2 tablespoons Justin’s Classic Almond Butter
2-3 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon grated lemon zest
1 tablespoon fresh parsley leafs
salt and pepper
micro greens, for serving

  1. Place all ingredients except micro greens in a food processor and blend until you have a smooth dip.
  2. If its to thick you can just add a little more olive oil or lemon juice.
  3. Spoon into a bowl and garnish with micro greens.
  4. Serve with pita chips.
