Easy Homemade Ketchup

A few simple ingredients come together to make ketchup at home! This is on a totally different level than the processed stuff. This ketchup can be stored in a sealed jar in the refrigerator for up to 1 week.

You will need:
3 tablespoons extra virgin olive oil
1 onion, chopped
1 clove garlic, crushed
1 medium red chile, seeds removed and chopped (optional)
11⁄2 lbs ripe tomatoes, roughly chopped
1⁄3 cup cider vinegar
2 tablespoons brown sugar
pinch of ground coriander
sea salt and black pepper, to taste
 
  • Heat oil in a saucepan, add onion and garlic, and cook for 2 minutes or until onion is soft.
  • Add chili, tomatoes, vinegar, sugar, coriander, and salt and pepper to taste.
  • Reduce to a low heat and cook for 15 minutes, stirring occasionally.
  • Spoon tomato mix into a food processor and process to a chunky sauce.
