You will need: 12 large scallops curry powder to taste 1 tablespoon butter for frying 1 grapefruit in segments 1 avocado, in cubes flaky sea salt red peppercorns
Dust the scallops with curry powder.
Heat the butter in a pan and fry the scallops 30 seconds on each side.
Place on plates and add grapefruit and avocado.
Finish off with some salt and crushed red peppercorns.
