Curry Dusted Scallops with Grapefruit & Avocado

These scallops look like jewels on your plate! Grapefruit and avocados are the [perfect pairing for this sophisticated yet simple dish!


Serves 2

You will need:
12 large scallops
curry powder to taste
1 tablespoon butter for frying
1 grapefruit in segments
1 avocado, in cubes
flaky sea salt
red peppercorns

  1. Dust the scallops with curry powder.
  2. Heat the butter in a pan and fry the scallops 30 seconds on each side.
  3. Place on plates and add grapefruit and avocado.
  4. Finish off with some salt and crushed red peppercorns.
